Raspberry Cream Cheese made in the Thermomix


One place that I miss from Canada is Tim Hortons! It is a donut & coffee chain that feels like home. I wouldn't rank their coffee as the greatest but my favourite treats from there are raisin tea biscuits, cinnamon sugar cake donuts, and a toasted sesame seed bagel with strawberry cream cheese. Yum...I'm getting hungry now! 

Sweet, fruit flavoured cream cheese isn't only found at Tim Hortons, it is a regular grocery item...and an item that I miss here is Australia! So, when we picked up some bagels (hard to find here as well) this week I whined that they'd be so much better with my favouirite cream cheese. Then I thought duh! I have a Thermomix- I can make it myself! No added preservatives, colours and any flavour I would like!

Try this light, fruity, spread on toasted bread or bagels or use as a dip or topping for fruit salad and you will be making it a favourite of your own!
Ingredients:
100g frozen raspberries
Dash of water
250g cream cheese  
25g agave syrup

Method:
Chop berries and water speed 4, 5 seconds. Scrape down bowl.

Add cream cheese and agave. 
Mix 20 seconds speed 4.


Easy and delicious!

Paleo Cookies in the Thermomix


These cookies can be eaten without guilt! I chucked a few things from my pantry together to create this concoction when I was busting for a banana flavoured baked goodie. Hope you like!

Ingredients:

2 ripe bananas
20 g walnuts
25 g ground flax
1 tbsp chia seeds
2 tbsp coconut
1/2 tsp vanilla
1 tbsp orange zest
60 g coconut flour (or GF flour)
Dash of cinnamon

Method:

Preheat oven to 180.

Add all ingredients to TM bowl. Mix 5 seconds, speed 5.


Spoon onto a lined baking sheet and bake for 15-20 minutes, or until slightly golden. Let cool completely on cooling rack.

Chocolate Protein Balls in the Thermomix


A new version of healthy, snack sized balls. Chocolate flavour, no sugar added and an amazing texture. Pop one of these for dessert and I'm sure you'll be satisfied!

Ingredients:

60 g almonds
60 g cashews
30 g sunflower seeds
30 g pumpkin seeds
120 g dates
60 g sultanas
1 tsp vanilla
2 tbsp cocoa

Desiccated coconut to top, optional

Method:

Add all ingredients, except coconut to TM bowl. Mix 1 minute, speed 9.


Tip contents out onto your TM mat. Roll into bite-sized balls.


Roll balls in coconut! Refrigerate until firm...and try not to eat them all at once! Hehe.

Foolproof Pie Crust in the Thermomix

For Thanksgiving, I made 2 pies because the pastry was just so easy! I didn't need two pies but they sure were yummy in the days after the big feast! This could be used as either a sweet or savoury pie. Each of my pies were single crust so this recipe only makes ONE. I wouldn't double the recipe as it could toughen the dough. Instead, because it's so quick, just make two batches if you need a bottom and a too for your pie. 
Ingredients:

210g flour
1tsp baking powder
120g cold, unsalted butter

2 1/2 tbsp ice water 

1tsp sugar

Add flour, baking powder, butter to TM bowl. Mix 10 seconds, speed 6.

Now, knead for 1 minute and slowly add water through the lid (no need to take out the MC, just pour and it will trickle down).

Tip on to Thermo Mat and form into a ball. Roll out to desired thickness (aim for .5cm as it will puff up slightly!) and larger than your pie dish. Use according to your recipe (as base, prebake, as top).

Chocolate Chip Cookies in the Thermomix

These were gone in less than 24hrs. I mean that is sooo embarrassing to admit but they were just so damn good. Comparable to Subway cookies but less greasy that's for sure. I will be very careful when I make these again...it is beach season now :| Hehe...says the self proclaimed Cookie Monster ;)
Ingredients:
100g raw sugar

125g butter
100g brown sugar
1/2tsp vanilla 
1 egg or egg substitute

250g self raising flour
150g dark choc chips OR white choc chips OR M&M's OR a combo!

Method:

Preheat oven to 180º. 

Add sugar to TM bowl. Mill 10 seconds, speed 9. 

Add butter, brown sugar and vanilla to TM bowl. Mix 1 minute, speed 4 but add the egg through the top lid at 30 seconds remaining.

Add flour. Knead for 20 seconds.

Add chocolate. Mix 10 seconds, REVERSE, soft speed.

Spoon mixture onto a lined baking tray. Bake for 10-12 minutes. Will be very soft until completely cooled, so leave on tray. 

These are naughty but yummy. Good for a once in a while treat! Happy Thermomixing!

Health Bites- A Healthy Thermomix Snack!


I'm a snacker I'll admit. And I find it hard to reach for something that gives me what I need: protein, fiber, good fats AND something tasty. So, yesterday I pulled out all of my seeds, nuts, dried fruit, superfood goodies and got creative!
This post includes 3 recipes that can be doubled, varied and devoured without guilt! I find that I am satisfied with one or two of my sized 'health bites'. You can roll the balls bigger or even press the mixture in a pan and cut as a slice (but you would definitely have to double the recipes then!)

Peanut Butter and Cocoa Bites
Ingredients & Method

Add 25g rolled oats to TM bowl. Mill 6 seconds, speed 8. 

Add 20g dates. Chop 20 seconds, speed 6. 

Add:
25 g GF flour
1tbsp cocoa
15g desicated coconut
1tsp chia seeds
1tsp sesame seeds 
20g maple syrup
15g honey
1tbsp peanut butter
Mix 5 seconds, speed 4.

Remove mixture from TM bowl and roll into balls. Roll in cocoa and refrigerate. Makes 9 bite-sized balls. 
**These are my favourite!

Sweet Quinoa Bites

Add 20g almonds to TM bowl. Lock bowl and press TURBO 3 times.

Add 25g quinoa flakes and 20g dates. Chop 10 seconds, speed 6.

Add: 
25g GF flour
1tsp chia seeds
1tsp hemp seeds
1tsp goji berries
1tsp ground flax
15g coconut
20g maple syrup
30g honey
Mix 5 seconds, speed 4.

Remove mixture and roll into balls. Roll balls in coconut and refrigerate. Makes 9 bite-sized balls. Yum!

Cinnamon Seed Bites


Add 25g rolled oats. Mill 6 seconds, speed 8.

Add:
25g sultanas
1tbsp pumpkin seeds
1tbsp sunflower seeds
Chop 10 seconds, speed 6. 

Add:
25g GF flour
15g desicated coconut
1tsp chia
1tsp hemp
1tsp cinnamon
25g maple syrup
20g honey
Mix 10 seconds, speed 4.

Remove mixture and roll into bite-sized balls. Leave plain or roll in topping of your choice! Makes 8 health bites!

Try using coconut oil in place of the honey or maple syrup in these recipes for a different flavour. If you can't find hemp seeds look at a health food shop in the non edible section (in Australia there is controversy over the legality of hemp for consumption). Chocolate Hazelnut Melting Moments in Thermomix

These cookies are melt in your mouth amazing! They are also super quick. I was running out of time to make something for a small dinner party so I jazzed up the 40 second biscuit recipe from the Everyday Cookbook.


Ingredients:

100g almonds
100g raw sugar
150g plain flour
130g butter, softened
2 tsp vanilla

Method:

Preheat oven to 180º Line baking tray.

Put almonds and sugar in TM bowl. Mill 10 seconds, speed 9.

Add remaining ingredients and mix 30-40 seconds, lock TM bowl, knead. 

Roll into small balls, place on baking tray. Flatten slightly with a floured fork. 

Bake 20-30 minutes. Cool on wire rack completely. Spread chocolate hazelnut on each biscuit or to combine two biscuits together. Enjoy! (They don't last long!)

Vegan Oatmeal Raisin Cookies Using Thermomix

One of the most comforting smells in the world is cookies baking in the oven :) This recipe is a family tradition and promises a soft, chewy cookie with hints of cinnamon and delicious raisins throughout. As a snack with morning tea or to satisfy your sweet tooth I know you will love these cookies!

Ingredients:

180g dairy free margarine
200g brown sugar
100g raw sugar
60g non dairy milk
1 tsp vanilla

250g gluten free plain flour*
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt

200g rolled oats*
125g raisins/sultanas 

Method:

Preheat oven to 180. Line baking sheet with baking paper. 

Add margarine, sugars, milk and vanilla to TM bowl. Mix 10 seconds, speed 3. Scrape down bowl. 

Add flour, cinnamon, baking soda and salt to TM bowl. Mix 20 seconds, speed 5. 

Add oats and raisins. Lock TM bowl, 10-20 seconds, knead. 

Use a 1/4 measuring cup to scoop out mixture onto baking sheet. Leave space for cookies to spread slightly. (I can fit 12 cookies on my edgeless baking sheet). Bake 12-15 minutes, or until golden. Will firm up slightly upon cooling. Transfer baking paper and cookies onto cooling rack. Let sit for 10 minutes before serving!
*If you are not allergic to the gluten in oats, you will see this recipe is gluten free!
