It is a donut & coffee chain that feels like home. I wouldn't rank their coffee as the greatest but my favourite treats from there are raisin tea biscuits, cinnamon sugar cake donuts, and a toasted sesame seed bagel with strawberry cream cheese. Yum...I'm getting hungry now!
Sweet, fruit flavoured cream cheese isn't only found at Tim Hortons, it is a regular grocery item...and an item that I miss here is Australia! So, when we picked up some bagels (hard to find here as well) this week I whined that they'd be so much better with my favouirite cream cheese. Then I thought duh! I have a Thermomix- I can make it myself! No added preservatives, colours and any flavour I would like!

Try this light, fruity, spread on toasted bread or bagels or use as a dip or topping for fruit salad and you will be making it a favourite of your own!
*To properly insert the Butterfly in the TM bowl you must locate to highest blade with the bump. Then insert the Butterfly so that it pushed CLOCKWISE on the BLUNT edge of that blade. You must always slowly turn the speed up when using butterfly and never go past 4. This allows it to 'catch'. If you stop in between whipping you must also carefully hold the top of the butterfly when increasing to speed to ensure that it catches.

These taste really good! Don't be fooled by the title, free from all of the above actually lends itself to a light, airy roll with a bit of chew. I was in awe the first time I tasted them, of course I was thinking the worst! But alas, the Thermomix and the creativity it generates, has proved itself to be the best kitchen tool I've ever had! I found this recipe on the Thermomix Recipe Community!
These cookies can be eaten without guilt! I chucked a few things from my pantry together to create this concoction when I was busting for a banana flavoured baked goodie. Hope you like!

Last night we went to a Matt Corby concert at the Fremantle Arts Centre and needed a yummy snack to enjoy during the music! I took at look at some dips at the shops last week to get inspiration for flavour combinations and was excited to come home and make a fresh and preservative free dip! Here is my first creation...it was really yummy and not too spicy so don't worry!

I didn't need two pies but they sure were yummy in the days after the big feast! This could be used as either a sweet or savoury pie. Each of my pies were single crust so this recipe only makes ONE. I wouldn't double the recipe as it could toughen the dough. Instead, because it's so quick, just make two batches if you need a bottom and a too for your pie.

Ingredients:

210g flour

1tsp baking powder

120g cold, unsalted butter

2 1/2 tbsp ice water

1tsp sugar

Add flour, baking powder, butter to TM bowl. Mix 10 seconds, speed 6.

Now, knead for 1 minute and slowly add water through the lid (no need to take out the MC, just pour and it will trickle down).

Tip on to Thermo Mat and form into a ball.

I've never had custard but everyone always rants and raves about it so I've been dying to try it! My favourite Thermo consultant inspired me to give it a go and voila...here is my vegan version. I thought it tasted very nice but I might have preferred it chilled, so tomorrow I will indulge in leftovers :) I don't have anything to compare it to but I quite liked this alternative dessert that's sugar, egg and dairy free! I combined a few recipes online to suit what was in my pantry tonight!
The hard part for me is not mixing any meat, or meat juice for that matter, into my vegetarian part of the meal. Same goes for dairy if that's something I'm avoiding. Here is a run down of what I made for dinner last night...

Pizza Bianca
Sweet Potato and Cauliflower Soup
Rosemary and Thyme Steamed Chicken with Sauce OR Lentils with Sauce
Cauliflower, Green Beans, Tagliatelle Carrot

Sound decadent?! Well, it was, and it was easy. I've based the meal around one of the Thermomix demo's so way too much food for 2, but I am working on the portion stuff after I sort out the taste factor!

Ingredients & Method:

Pizza Bianca
Preheat oven to 220º.

3 sprigs rosemary leaves
2 cloves garlic, peeled

Add to TM bowl. Chop 4 seconds, speed 7. Remove and set aside.

220g lukewarm water
1tsp sugar
2tsp yeast

Add to TM bowl. Mix 20 seconds, speed 2.

Leftover cauliflower (what didn't fit in my TM basket)
Handful of frozen green beans
1/2 tin lentils, in a ramekin
